Sweet Potato Tacos

I tried these unique little tacos awhile back at my sister-in-law's house and I was immediately surprised at how good these were. Over a year later here I am screaming to the world about them! Great for veggie lovers or if you have diet restrictions, these tacos are the bees knees.
Promise you meat lovers out there will like them too. I've fed 3 meat lovers between Kevin and people at work and they agree this is a perfectly balanced taco!
What takes the longest is the peeling of the sweet potatoes. I don't think there is any tool out there that can make peeling potatoes enjoyable. Change my mind. I used 3 fairly good sized sweet potatoes.
Get your weapon of choice! I love these type of cookie sheets....whatever they are....thank you homegoods! Chop all your potatoes up into tiny cubes and cook in a preheated oven at 400 to 425 for about 15-20 minutes or so.
Before you put them in the oven, season and oil your potatoes. Of course....you already know what oil I used.
Mmmm the smoked paprika adds such a great flavor!
While the potatoes cook, you'll want to cook your other veggies that are in the mix. Onion, garlic, black beans, and sweet corn.
This part is super important. Let your beans sit in a strainer for a bit. Best to have the liquid completely drained.
I obviously drained before setting on this plate.....lol *black bean juice seeps all over life*

Next after you have started sauteeing the corn, black beans, onion, + garlic, you will want to add in the juice of a whole lime and 2-3 tablespoons of honey.
If you aren't using your local honey....what are you doing with your life? Get it together Susan.
Make sure you mix it all together. Sweet potatoes should be done now, and all you have to do is add those in.
Promise 450% these are super appetizing.
While that is simmering on low, warm up your fajitas, add in some cilantro to your potato mix, & grate your cotija cheese! The cheese you use MATTERS!
If you're feeling extra adventurous, slap on some purple cabbage! Adds great color and some crunch :)
