Roasted Tomato + Jalapeno Soup
What is your ideal cold day activity? I love simplicity. Staying in my comfy clothes, eating some homemade soup, watching movies & cuddling on the couch. Total homebody status.
Everywhere besides Arizona is prepping for the cold winter that is approaching quickly! Here in Arizona, we are JUST getting started. It is like we are one season behind! Since the temps are cooling down, I am actually able to start whipping out more recipes to match the weather.
This homemade tomato soup is seriously SO easy to make. You roast your ingredients in the oven, then blend them up. Who knew soup could be so easy? I'd have to say though, not all soups can be made like this; so I definitely appreciate being able to make something so delicious in fractions of time.

All I used was:
7 vined tomatoes
1/2 a yellow onion
(supposed to add in garlic but I forgot it at the store 30 minutes before making it)
1-2 Tbsp of Avocado Oil
You will need a good blender/food processor, parchment paper, a cookie sheet & some parsley to top off the soup.
First you should chop up all your veggies. No need to be perfect here, they will turn into mush here shortly. I topped with avocado oil & salt/pepper.
Garlic would really make this delicious guys. Don't be like me and forget everything you're supposed to get at a store. It happens ALL the time.
I baked on a convection setting on 400 for about 15 minutes or so. Until you see that the tomatoes and jalapeno are roasting.
As you can see, all the veggies will look wilted.
Weeeee, now all you do is blend up!
This goes great with grilled cheese or just by it self.
