Quinoa + Black Bean Stuffed Peppers

I just love this wellness train that everyone is on. I can add quinoa to my title and the crowd goes wild! I'm serious though, I feel like being healthy is at an all time high. I wonder what will happen if it falls off. Will no one like my food lol?

This recipe is pretty easy going. The important part is getting the flavor right and seasoning your pepper stuffing so it is PACKED with flavvvvahhh.
We will jump right in...
Make sure you rinse your quinoa so the water running through is clear. Sometimes quinoa can have a powdery texture to it and you do not want to cook that into your noms. In addition, keep in mind that everything cannot be sorted 100% out of quinoa so just look through it real quick.
Cook your quinoa as directed on the package.
Next step is to add all of your ingredients into a medium sized bowl. Your black beans, green chiles, cilantro, jalapeno, etc.
Add your cooked quinoa to the mixture.
Now I didn't buy organic green chile sauce, and ya girl is too lazy to make her own for this recipe. So this shall do. I didn't measure, I just used enough to make it stick together.
Time to stuff these babies!!!
I pack them pretty well. My next step probably won't make any sense to you but I promise it will work.
Cut your peppers in half AFTER filling them. Don't ask, just do. Or you can stuff after cutting in half as well. I don't know, just go with the flow!
Bake on 375 for around 15-20 minutes. Then you will add on some cheese to top it. Make sure it is all melty goodness.
These were the perfect weeknight meal. Very quick to make too, which is great because Lord knows my week has been so crazy.
P.S.--I forgot to add jalapenos to the recipe card. Oopsies.
