Creamy Chicken Tortellini Soup
Updated: Dec 4, 2019
Can someone check my age over here? I feel like I make a lot of soup. Going to bed early AF and eatin’ soup. Party on the weekend over here. Bring your heating pads, organic tea & your favorite mug to drink soup out of. I’ve got you covered.
There’s just something about adding cheesy noodles to soup. It’s like I get my cheese craving in delicious, hearty, soup.
This creamy tortellini chicken soup takes less than 2 hours to make. You can let it simmer longer for flavor however. All you need is a large pan, your ingredients (which I will list in the recipe card), and a whole lot of love.
Carrying on now…
So I started off by putting a lot of garlic and onion in the bottom of the pan with some oil to get some flavor going. I always add way more garlic than needed.
Next I tossed in the chicken thighs. No picture here. The picture I took turned out looking pretty graphic. I will leave it at that. S……M…..H.
After the chicken is done, take the thighs out and put them on a cutting board and chop up to put back into the soup.
However, before you do that, add in your bone broth and regular broth to the pan. Add in your water and seasonings as well.
Chop your veggies up and add everything all together. Reduce heat to low and let simmer.
I let it simmer for about 15-30 minutes depending on how much flavor you want. Add in your tortellini
Add in your spinach and your cream! Combine and let simmer for about 10 more minutes or so.
There you have it, delicious grandma soup in less than 2 hours. It was delicious, let me tell you!
