Cream Cheese Banana Bread
In life there is addition and subtraction. My bananas turn black which makes me sad because I can't eat my bananas. But then I can use those overly ripe bananas to make delicious banana bread. It's a win-win situation.........this shit is bananas!!! P.S. I am half asleep right now, lets see how this goes.
I'm done being ridiculous lol. In all seriousness, I love this twist to banana bread. Adding cream cheese into anything you bake I feel like is absolute must! It makes whatever you bake moist and full of flavor!
Everything you need is basics! Usually the recipe calls for regular granulated sugar and feel free to use that. However, the bananas are super sweet and my coconut sugar kick recently rocks.
Creaming your butter, cream cheese + sugar is the first step. Making sure your butter and cream cheese are softened is key.
The majority of the batter should be free of lumps.
Next up is adding in your milk, vanilla, baking powder, eggs + salt to the mixture.
As you can see, the milk liquefied it a bit. No worries though because the flower and bananas still need to be added.
So I add in 1 1/2 cups of flour at this point and the remainder before it goes into the oven. I forgot to actually add it in until it was in the pan (DON'T BE LIKE ME, haha I'm a terrible, clumsy example at times). Sometimes I sit here and think.....wait, how am I making recipes and posting them for people to follow?
It's banana time! I only used 3, because my other bananas were so ripe they molded.......another proud moment.
They should be very easy to mash. At this point you will now add the bananas to the dough mixture.
So this is where you add in the extra 1/2 cup of flour. I luckily have mad stirring skills and was able to recover my downfall by mixing it in at last moment in the pan.
You're going to bake on 350 for about 40-50 minutes. Keep an eye on it and if it starts turning golden on top and you can smell it through your house, that's a clear sign its done!
You can also separate this up between small loaf pans. Shorten time, probably around 25 minutes or so?
Serve while warm (always) + with butter! Oooh or if you have some, apple butter would be SO good.
