Chicken Mole Tacos
I have to admit it, I took the easy way out on this recipe. If you make mole from scratch, it takes several hours. Lets be real, I work a full time job so that wasn't possible! However, these tacos were SO good. I was literally picking up the fallen pieces on my plate with my fingers and shoveling it into my mouth. I got weird looks from Kevin for it but who cares!
I kept joking with my coworkers that I would bring in excellent white girl mole & they approve of my methods lol.
I didn't take pictures of my chicken in my instant pot. But I used the slow cook method for it and I cooked about 5 breasts in 1 can of chicken broth and some stubs chicken seasoning.
The most time consuming part of this is the mole sauce. I cheated as you can see by using Dona Maria Mole sauce......but if you make this you don't have to tell anyone that ;)
BTW.....to save you some time. This jar will not open easily. You have to tip it upside down on a paper towel. Take a knife and lift up on the 3 designated points of the jar. (Lists it on the top in a triangle)

But anywho, the recipe calls for:
-4-5 cups of chicken broth
-1 can of dona maria
-Then I add in 2- one fourth chunks of abuelita!
I transferred all my chicken to a pan to keep it warm while my sauce is cooking!
Not going to lie, the mixture looks weird at first. You will spend A LOT of time stirring. My suggestion is getting a potato masher and mash the dona maria.

Looks like hot chocolate! I added in 2 tablespoons of grass fed butter to make it creamier.
Chop up your onion and fresh cilantro for your taco toppings and you are good to go!
Assemble your tacos like so!
Finished product above! Regardless of the mole sauce taking awhile, It was totally worth it. The mole makes a lot of sauce so you have left overs to put on other foods. I am thinking of using it up for enchiladas!
