Cauliflower Tacos with Bang-Bang Sauce
I've gotten a lot of requests for vegetarian options on tacos. I actually made these about 2 weeks back. But let me tell you, I had meat lovers eating these tacos....and they loved them! I'm actually shocked I forgot to put this up on the blog! These were a big hit in my house and they are a great low-carb or meatless option for all you veggies out there!
I promise I'll whip up different variations of vegetarian options here soon :)
What you will need:
1/2 a Head of Organic Cauliflower--Cut into Bites
Panko Bread crumbs or Flour (That is what I used)
Smoked Paprika, Salt, Pepper, Garlic + Onion Powder
2 Egg Whites Whisked
Freshly Chopped Cilantro
2 Tbsp of Sweet Chili Sauce
1/4 Cup of Mayonnaise
2 Tbsp of Sriracha or Hot Sauce
1 Tbsp Honey
First step is to rinse your cauliflower & chop it into bite sized pieces.
After you're done with the cauliflower, you'll want to prep your egg mixture. Make sure you separate the yolk from the white.
In addition, season your flour with seasoning. I used smoked paprika, salt, pepper, garlic powder & onion powder. This will give some extra flavor because Cauliflower tends to be very bland.
I like to set up a little station to bread the cauliflower. Or for anything I am baking that is breaded. It's like a little factory system! Not as much mess either. Can I get a hey-o!
So it's super easy. Cauliflower goes into egg mixture --> then to flower mixture---> then into the pan for baking!
As you can see, the smoked paprika got brought out in that flour once It has been settling.
All that is left to do with the cauliflower is to bake on 400 until golden brown & crispy.
Make sure you drizzle with Avocado oil or oil of choice!
Bang Bang Sauce:
This sauce is SO good. Honestly this would work for any type of taco that is breaded. Shrimp especially too!
All you do is mix the mayonnaise, the sweet chili sauce, sriracha, & honey.
So by now, your cauliflower should be nice and crispy like so:
Chop up some cilantro/onions and pour your bang bang sauce on top!
**Warning, you will not have leftovers**
Eating your veggies isn't so bad afterall!
