To be honest, eating healthy in our household has been tailored down to bowls. How many different ways can we create these bowls is my question. It's kind of chipotle at home, but way better if you ask me (sorry not sorry chipooodle lovers).
We are constantly either eating bowls with chicken, pork, or shrimp. Kevin sometimes requests steak but I can't eat steak so he is Mr. Solo Dolo over there.
There's not really much to this besides deciding what ingredients will go best for each bowl type.
I chose onions, bell peppers, cilantro, jalapeños, brown rice, and topped with cheese!
My pork was already pre-cooked, however I find that it is very dry and needs some moisture added to it. Can't forget the flavor either.
I added two packages of Trader Joes carnitas and steamed for a couple of minutes in my instant pot. I added in this taco seasoning for an extra pop of flavor!
Cook up your onions, peppers, and jalapeños in a cast iron.
Mix together cooked brown rice (or any rice), grass fed butter, + cilantro.
Pork fell apart which is exactly what I was looking for.
Combine everything together and top with some cheese, sour cream, + lettuce if you choose!
