Caramelized Pork Tacos

I feel like I am 8 steps behind when it comes to my blog posts. Things just get so crazy around here & with throwing work into the mix as well. I have to remember that sometimes it's okay to not have it all together.
If you follow me on Instagram or Facebook, you probably have already seen this recipe. However, I feel its necessary to share the love to everyone!
These caramelized pork tacos were so good! Sometimes it's just a must to add sugar into your meals somehow. Adds that extra twist.

Start off by making your salsa to set aside. Chop up *fresh* pineapple, onions, and a ton of cilantro. Put into an air-tight container and put in the fridge.
While that is happening, cut up your pork loin into thin strips. I used about 1.5 pound loin by the way.
Make sure you season your pork strips so they have lots of flavor. I like to always add salt, white pepper, garlic, smoked paprika.
Start adding pork to the pan and cook until no longer pink. At this time you will want to mix together your turbinado sugar and water to pour on top of the pork.
After you pour your sugar water combo on top of the pork, turn the heat up to high to make sure you get a nice caramelization on the pork!
Now that is all left to do is to mix your spicy mayo sauce to go on top of your tacos!
2:1 ratio of mayo and sriracha!
Really simple! It's nice to have quick Taco Tuesday recipes like this though. I know life gets busy and it is hard to juggle everything.
I'll be visualizing more taco recipes......might have to make some beef ones and have taste testers try those out. What do you all think?
